Since my oven can only bake 1 pan at a time, I started with my potatoes. I sliced them into wedges, put them in a bowl with some melted ghee, covered it with a plate, then did the shake-shake dance in my kitchen. I lined them up nicely on my aluminum foiled cookie sheet (cause I hate washing oily greasy things) and set them to bake in the oven at 400 degrees Fahrenheit. After 20 minutes, I turned them all around, and allowed it to bake for 15 minutes more. While I was turning the wedges around I was also getting a free steam facial. 2 birds with one stone! Just the way I like it.
Then I baked my tilapia fillets for 20 mins at 350 degrees F. I had marinated them beforehand with ghee, parsley, salt and pepper. Why parsley? I don’t know.. Don’t ask me hard questions. I just thought they would taste good together. And *ehem, they did.
Midway through the baking of the tilapia fillets, I started to saute the asparagus in ghee in medium heat, 10 mins.
Of course, we had this meal with wine. White wine this time, Cloudy Bay Sauvignon Blanc, my absolute favorite!
After dinner we moved to the couch to cuddle. A perfect way to end our day..
