Gluten Free Dairy Free Beef Fajitas Pitas

Have I mentioned before that I love food? I love to eat, everything and anything! Having this gluten and dairy sensitivity is killing my soul, but at least my body will live longer and healthier. That is a good compromise, right?!?

I have to find alternatives. I just need to!

I’ve been craving for anything that will make my brain think that I am eating bread, aka, gluten. I searched google for gluten free pita, I was delighted to see that there are a couple of recipes online. I don’t like to have too many ingredients though, and with my husband’s appetite (yep, I am blaming Marco again) I cannot be cooking in the kitchen for 3 hours for dinner. I need something that is quick, easy and painless.

I chanced upon Gluten Free on a Shoestring. I liked her recipe, 6 ingredients: gluten free flour, baking powder, salt, eggs, oil, and water. Her instructions are accompanied by pictures which just made it sooo much easier for me to realize that I was not doing the right thing! Nope. My pita dough did not look anything like hers.

I somewhat followed her instructions, I had to improvise by using my blender, and I it was way past dinner time, I don’t make husband wait for dinner, “me want food!”

Do not take me seriously, I repeat, do not take me seriously. My husband will never demand for food, he will wait and sit and wait AND wait. He does not complain or demand, he is actually pretty amazing ❤ A caveman in his own way, but nevertheless, pretty & amazing.

Enough drama.

I mixed the gluten free flour, baking powder and salt in a bowl. I do not follow instructions very well, I like to do it my way, quick as a rabbit. If you have seen me in the kitchen you will know what ayma talkin’ about! Everything just happens all at the same time, even I don’t know how I do it, but I do have the scars to prove it.

IMG_0749My pita dough goo after being blended at high speed, recipe said to use food processor at low speed. 

After the mixing part, I am suppose to cut it in 6 pieces. Yea, well there was no cutting that happened. No way. It was goo, it was runny, it was just all over the place.

I got my cake pan, brushed ghee on it, then poured 1/2 cup of my goo in. Stupid mistakes call for desperate measures.

IMG_0751In the oven it went at 400 degrees F for 7 minutes.

Cashew ricotta cheese. I didn’t realize that we had a big rat in the house who was secretly snacking on this.

Cabbage, mushrooms, onions, olives, and sun dried tomatoes.

And finally, it was time to eat!

I made a mango smoothie for dessert. 2 ingredients, 1 blender, bring it!
