Homemade Gluten Free Dairy Free and High Fructose Corn Syrup Free Dark Chocolate Covered Granola Bars

How did the name for this granola bar get sooo long?!?

IMG_8215Don’t be fooled by the long name though, this recipe is easy breezy and super yummy.

For the granola bar:

I mixed

1/4 cup raisins

1/4 cup craisins


1/4 cup prunes

1/4 cup chopped walnuts

 1/4 cup chopped almonds


1/4 cup dairy free chocolate chunks


and 1/2 cup gluten free corn free AND high fructose corn syrup free rice krispies.

Next I added 1/8 cup honey and 1/3 cup almond butter, and mixed everything.

I lined my square pan with baking paper, poured the granola mixture into it. I leveled it and using another sheet of baking paper, I pressed down to compact it. In the refrigerator it went for 20 minutes.

After 20 minutes, I cut the granola block into bars.

For the dark chocolate coat:

On a double boiler, I melted dairy free dark chocolate. I allowed it to cool for 5 minutes, then I dipped by granola bar in. At the same time using a spoon to make sure everything is covered in chocolate. I laid them on a cooling rack with a plate in the bottom for any excess chocolate drippings, and in the freezer it went for 5 minutes.

Afterwards, I moved them to the refrigerator for 1 hour.

I wrapped my bars in aluminum foil and then placed them in a tupperware and in the frig it went again. I did keep 1 on my counter top so see if they will sit well in room temperature. I’ll add my findings later on in this post.


You’ll be done with one bar wayyy before you finish saying it’s name!
