Instead of going out to celebrate our 7th Anniversary, we decided to have dinner at home. I made
and for dessert.. Gluten Free Dairy Free Strawberry Crepe!
For the Crepe I mixed:
1 cup Gluten Free flour
1/2 teaspoon baking powder
1/8 teaspoon salt
1/2 cup almond milk
1/2 cup water
2 tablespoon coconut oil
1 tablespoon molasses sugar
1/2 teaspoon vanilla extract
I mixed everything together, then poured 1/2 cup batter on my ghee oiled pan. This recipe yields 4 crepes.
For the filling, I used thawed frozen strawberries. I blended 1/2 cup strawberries with 2 tablespoons molasses sugar. The rest of the strawberries, I chopped up.
For the dark chocolate drizzle, I melted some dark chocolate on a double boiler.
And for the whip cream, I used this amazing rice whip I found in the grocery, 33 ringgits. OMG.
I folded the crepe in half, filled 1 side with the chopped strawberries, poured some of my homemade strawberry filling. Folded the other half of the crepe. Drizzled it with the dark chocolate, and topped it with dairy free rice whip.
