Pancakes Topped With Caramelized Apples, Walnuts, Caramel Sauce and Rice Whip

YES, get excited. This breakfast is all gluten free and dairy free baby!

(yield: 3 pancakes)

1 cup gluten free flour

1/2 cup almond milk

1/2 cup water

2 tablespoon coconut oil

1 teaspoon baking powder

1/8 teaspoon salt

1 tablespoon molasses sugar (whichever sugar you prefer)

Mix everything together in a bowl. Heat your pan, lower to medium-low, melt 1/4 teaspoon ghee, just so the pancake doesn’t stick on your pan. Pour 1/2 cup of your pancake batter on the pan. Wait about 2 minutes, or until the sides are cooked, then flip. Cook for another 1 minute, or until pancake is completely cooked.

Caramelized Apples

2 granny smith apples sliced thinly

1 tablespoon ghee

1/2 tablespoon cinnamon

1 tablespoon brown sugar

Put everything in a pot at low heat until apples are soft.

Caramel Sauce

1 1/2 cups coconut milk

1/2 cup brown sugar

1 tablespoon ghee

pinch of salt

Mix everything in a pot, and bring to a boil. Lower heat to medium for 15 minutes. Stir continuously. Once it has cooled, transfer to a jar and refrigerate up to 1 week.

I put 2 pancakes on top of each other, with caramel sauce in between. Added the caramelized apples on top, sprinkles some chopped walnuts, drizzled it with caramel sauce (again), and topped it with the rice whip (which I got from the grocery).

This should fuel my husband for a long day of errands ahead of us 😉 The way to a man’s heart is through his stomach.
